Greek Pinwheels

 

            Turkey breast, feta cheese, ripe olives with spinach,

                        Whole-wheat wrapped and sliced

 

Servings: 2

Preparation Time: 20 minutes

 

Ingredients


¼         cup fat-free cheese, softened

¼         tsp dried oregano

¼         cup reduced-fat, basil and tomato flavoured feta cheese (crumbled)

1          can (2 oz.) chopped ripe olives, drained

2          (8 inch) whole-wheat tortillas

4          oz sliced turkey breast

1          cup baby spinach leaves

 

Directions

1                    In a medium mixing bowl, use a fork to combine cream cheese, oregano, reduced-fat feta cheese and olives.

2                    Evenly spread half the cheese mixture on each tortilla.  Then top with half the turkey breast and half the spinach leaves.

3                    Roll up tightly, cover in plastic wrap and refrigerate until firm enough to slice, about 15 minutes.

4                    Remove plastic wrap and slice each tortilla into 6 pieces.   Serve and enjoy
